Buckwheat Blossom Honey

From: San Bernardino County, California

Buckwheat honey is a dark, robust, and nutrient-dense honey produced from the nectar of buckwheat blossoms, known for its molasses-like malt flavor. Because of its deep, earthy taste and high antioxidant content, it is often compared to maple syrup and is favored by craft brewers and bakers. It pairs exceptionally well with strong, salty cheeses like Roquefort, or as a rich glaze for hearty meats like pork and beef.

Description

All our honey is raw and unfiltered, which may be crystalized upon delivery. This is a natural process that honey goes through.

You can safely reverse the crystallization with a warm water bath:
This method uses low, indirect heat to melt the crystals without damaging the honey’s flavor or beneficial enzymes (especially important for raw honey).

1. Prepare the Water: Fill a pot with water. The water level should be high enough to cover the crystallized honey in the jar, but well below the rim/lid of the jar.

2. Heat Gently: Heat the water on the stove until it is very warm, but do not let it boil or even simmer vigorously. The ideal temperature to preserve the quality of raw honey is around 95-110F.

Submerge the Jar: Turn off the heat or remove the pot from the burner. Place the glass jar of honey (with the lid removed or loosened) into the warm water bath.

Pro Tip: To prevent the glass from cracking from a sudden temperature change, you can place the jar in the pot before you start heating the water.
